Overview
Toraja's highland cooperatives have sharpened fermentation practices considerably over the past decade, producing lots that increasingly compete with West African premium origins on cup quality. Full, syrupy body with a distinctive herbal note that sets it apart from both Sumatra and Flores profiles. Our limited specialty-grade lot has been independently cupped at 83.75 on the SCA scale by panelists at a certified coffee and cocoa training/cupping center — above the 80-point specialty threshold.
